ST. PAUL'S PICNIC POTATO SALAD
Vegetable Recipe Ingredients:
6 lbs. boiled new white potatoes,
diced and chilled
6 hard boiled eggs, chopped
1 c. stuffed olives, sliced or
chopped and drained
1 c. light mayonnaise
2 tbsp. dried parsley
1 tbsp. prepared brown mustard
1 c. chopped celery
1 tsp. onion powder
1/2 tsp. white pepper
1/2 tsp. garlic powder
1 tbsp. apple cider vinegar
Cooking:
Mix mayonnaise, parsley, onion, and garlic powder, white pepper, mustard, and vinegar until smooth. Let stand. Toss potatoes, celery and olives with mayonnaise mixture. Add eggs. Let stand 1 hour. Add more mayonnaise if desired.
