BUFFET CHICKEN SALAD Recipe

Buffet Chicken Salad Recipe Ingredients:

1 whole fryer, 2 1/2-3 1/2 lbs.
2-3 c. seedless grapes, cut in half
1 c. sliced toasted almonds or pecans
Mayonnaise
Salt
Cantaloupe rings
Watercress (optional)

Buffet Chicken Salad Recipe Cooking:

Boil, de-bone and dice chicken. Combine chicken, grapes, and almonds with mayonnaise to moisten and salt as needed. Serve in melon rings on watercress, or mold by pressing into a bowl, then turning it out on a platter, and garnishing with melon balls or slices and clusters of grapes. Decorate with watercress.
